Combine the values

ok, in "set variable" section you can choose the existing variables with the existing dots. in this menu you choose the 2 variables you wanna combine.

in this case, i would use var: flsh handler
then click on 3 dots again and then i use var:s

the new variable contains the both variables in one variable.

Is it possible to edit this variable manually afterwards? I want to make reminders with manual editing.

When using action set variable there is option 'user prompt'. It opens window where you can manually write whatever you want and it sets variable to this value.
Another option is launching macrodroid - variables - and you are clicking on variable's value to edit it.
