Possible to make a widget that contain custom text and variables.

Use a MD Custom Widget and update its image and/or label within a macro via Modify Widget Button action

Good idea, but the widget is only 1 x 1 so the text I want to show is to long and the widget is not resizeable.

Unfortunately not!
You could have a look to KWGT app which works fine with MD
