changing application permissions

Is it possible to write a script to change the permission of the application?
I would need to change the "call lists" permission in the "health" application from huawei to "disallow" and vice versa. This is due to the interference of the handsfree in the car (while it is being used) by the GT2 Pro watch.

thank you, but unfortunately I don't have a rooted device. Maybe it would be enough that it takes precedence over the bluetooth of the watch when using the car's bluetooth.
I have made a macro so that when the car's BT is connected, the watch is disconnected from the audio device... unfortunately it doesn't work as it should and I have to press the switch on the display in the car to hear the phone call in the car...
When the "health" app is denied permission to the "call list" everything works fine. Unfortunately, when using the watch outside the car, it is not possible to see who is calling...

If you're on Android 11+ you could use LADB or Termux to achieve results. These work if you're on lower than Android 11 if your device supports wireless debugging
